ONE of Weston's best-known restaurants could soon be bulldozed to create a massive new bar and eaterie.Dimitris Taverna in Richmond Street could be levelled and replaced with a three-storey tapas bar, oyster bar and Greek restaurant seating nearly 500 people.Owner, Dimitri Demetriou, said: "We are planning to redevelop our site and create another very traditional Mediterranean restaurant with a wine and tapas bar on the ground floor, a Greek restaurant on the first floor and an oyster, champagne and Guinness bar on the top floor."There is definitely a market for an oyster bar in Weston, it's just finding the right atmosphere. The older generation, those over 35, want to go somewhere and have a charming evening. There aren't many venues around that can offer that."We are aiming to attract them and keep them for the whole evening. We want to create one of the best venues in Weston, using stone and wood to make it feel like it is now."The ground floor would seat 200-250, the first floor 125-140 and the top floor 70-80."We will want to bring in more chefs, probably Greek, Italian and Spanish. If we get planning permission we will start early next year and it will probably take six months to complete."The whole building will come down and a new one built, making use of a lot of garage and unused space at the back. I've been planning this for 18 months. It's going to be a big project."While his taverna is being rebuilt, Dimitri will be focussing his attention on Demetris Bistro which he opened in Uphill a fortnight ago. His taverna plans will be submitted to North Somerset Council for planning permission in the next fortnight.
