Thatchers Cider has created a Pancake Day recipe with a zingy twist which features its Cloudy Lemon cider.

Pancake Day takes place on February 16 this year and the family-run cidermakers have put together a simple recipe to make a cloudy lemon pancake drizzle in less than five steps.

Cloudy Lemon is a naturally cloudy, 4 per cent sparkling cider made with real lemons. The cider also uses sweet dessert apples including braeburn, gala and red spur picked from Myrtle Farm to give it a crisp, sweet taste that is finished with a zesty zing.

Ingredients:

Pancake mix of your choice

125g icing sugar

15ml Cloudy Lemon cider

One lemon

Blueberries or your choice of fresh fruit

Method:

1. Create your pancakes, just how you like them, American fluffy style or crepes

2. Mix the icing sugar with the Cloudy Lemon and add a squeeze of lemon for extra zing

3. Drizzle over the pancakes

4. Top with fresh fruit

Plate up and enjoy.
